• Tis the season to eat cake!

    With Christmas only 6 weeks away what better way to plan what cake you’ll going to be eating over the festive period… I have put together a selection of popular loaf cakes that I will be baking & selling…My seasonal Fruit Cake is full of delicious vegetarian mincemeat and lovely marmalade it gives the cake a moist centre, I sometimes top the cake with flaked almonds and other times I ice it with holly edibles, my cranberry & allspice cookies are really popular they are crunchy on the outside and soft inside they can stay fresh for up to 7 days in the fridge…sometimes I add white chocolate chunks to the biscuits…another delicious cake is white chocolate & cranberry…its packed full of dried cranberries and melted white chocolate...and here is the recipe.

    You will need:

    • 8oz white chocolate

    • 3oz butter, softened

    • 4oz caster sugar

    • 2 large eggs, beaten

    • 1tsp vanilla extract

    • 5oz self-raising flour

    • 5oz dried cranberries

    Preheat the oven to Gas 4, 180ºC, grease and line the bottom 2lb loaf tin with baking paper.

    Break 4oz of the chocolate into a bowl and set over a pan of simmering water until melted and smooth.

    Cool slightly. Roughly chop 2oz of the chocolate into small pieces and set aside.

    Mix all the ingredients into a bowl using an electric mixer adding the melted white chocolate last… Spoon the mixture into prepared loaf tin.

    Cook for 45mins on 180 degrees, until a cocktail stick inserted into the centre comes out dry.

    Once the cake is cool - you can either melt the remaining white chocolate and spread on top of the cake, or grate the white chocolate and add some lovely Christmas decorations.
